Scope of Work: The Cook II is responsible for independently preparing and cooking large quantities of food in a high-volume dining facility while ensuring quality, consistency, and compliance with food safety standards.
Responsibilities:
Independently prepare large quantities of food using a variety of cooking methods as prescribed by Army recipes and local menu plans
Provides proper plate-up and portion control
Operate, maintain, and clean kitchen equipment
Display good customer relation skills and take initiative to greet guests in a friendly manner.
Maintains and records proper temperature controls, food storage, and food rotation.
Performs all side work and setup/breakdown duties as assigned.
Perform other related duties as assigned.
Requirements:
A minimum of two (2) years of prior cooking experience in a full-service restaurant is preferred.
Ability to obtain and maintain a ServSafe certification.
Experience in a military kitchen (DFAC) is preferred.
Must satisfactorily complete Food Service Medical Clearance (Tri Service Food Code – TB Med 530).
Ability to obtain and maintain a fully adjudicated Secret Clearance.
Must be able to obtain an interim Secret Clearance prior to start.
Must possess and maintain a valid state driver’s license and a safe driving record, in accordance with company policy, to operate vehicles or equipment as required for the position.
All candidates must successfully complete pre-employment screening, which may include a criminal background check, motor vehicle record review, and a 5-panel drug test, in accordance with company policy and applicable laws.
Physical Demands / Work Environment:
Fast-paced commercial kitchen environment with exposure to heat, noise, sharp tools, and cleaning chemicals; requires adherence to food safety and sanitation standards.
Physical requirements include (but are not limited to) the ability to lift 50 pounds, pushing, pulling, carrying, stooping, bending, squatting, standing, and reaching for long periods of time.
Must be able to work on-call, alternate, and extended shifts as needed to support mission requirements, including nights, weekends, and holidays. To meet contractual obligations, employees may also be required to remain on-site for extended periods during scheduled exercises or real-world events (e.g., 24-hour lockdowns).
